Apple Sourdough Griddle Cakes

Two words: fried dough.
I really think that says all that needs to be said. This griddle cakes recipe was born from an effort to use up a bunch of starter. It makes a LOT of griddle cakes, but the recipe is easily divided by 3 for smaller groups of diners.

Ingredients

  • ¾ cup agave, maple syrup, or simple syrup
  • 3 cups applesauce
  • 3 cups non-dairy milk
  • 3 cups sourdough starter discard
  • 6 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 3/4 teaspoon of salt
  • Vegetable oil

Process

Mix all wet ingredients. Add dry ingredients and use a whisk or fork to mix and cut in the flour. Don’t over-mix to try to get out every lump.

Let the batter sit while you preheat your griddle to medium-high. I also prepare a plate with parchment paper and preheat the oven to the warm setting so I have a place to put the cakes as they get done.

When the griddle is hot, add some oil and spread evenly and then add batter by ⅓ cup amounts to create your griddle cakes. Cook on the first side until nicely browned, flip over, and repeat.

These are actually good with nothing on them, but you can serve with syrup, butter, apple butter, jam, powdered sugar – whatever your idea of amazing is with fried dough!

Unexpectedly Delicious

Yesterday was not a great day in the kitchen. First, I accidentally microwaved Lilith, my sourdough starter.

Then I somehow managed to get the percentages wrong in the focaccia dough that I was making and it came out veeeery wet.

And I spilled pretty much everything that I touched.

The focaccia didn’t rise as much as I expected and I forgot to oil the pans. But I carried on and finished adding the tomatoes, olives, and rosemary.

And I shoved it in the oven alongside the non-vegan version, where, of course, it took 1.5 times the time I had planned.

But weirdly, in the end, it was delicious.

And Lilith seems to have made it through (thank goodness for discard saving).

So, I am sure not going to give today an A, but if I graded it on a pass/fail basis, I guess it would pass.

Thank goodness for the unexpectedly delicious!

Vegan Sesame Noodles

These noodles will always and forever be a family favorite. They are also great to take to potlucks (when that happens again) and picnics.

Ingredients

1 lb thin spaghetti noodles (cooked al dente and rinsed in cold water, drained)
1/4 cup toasted sesame oil
1/4 cup soy sauce
3 tablespoons chili oil
3 tablespoons black or balsamic vinegar
3 tablespoons of brown sugar (can use raw, but it will be harder to mix in)
1/4 cup roasted sesame seeds
Optional: Edamame, diced red pepper, other veggies

Wisk liquids and sugar together until the sugar is melted. Toss with noodles. Add sesame seeds and any other optional veggies. Chill.
