Apple Sourdough Griddle Cakes

Two words: fried dough.
I really think that says all that needs to be said. This griddle cakes recipe was born from an effort to use up a bunch of starter. It makes a LOT of griddle cakes, but the recipe is easily divided by 3 for smaller groups of diners.

Ingredients

  • ¾ cup agave, maple syrup, or simple syrup
  • 3 cups applesauce
  • 3 cups non-dairy milk
  • 3 cups sourdough starter discard
  • 6 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 3/4 teaspoon of salt
  • Vegetable oil

Process

Mix all wet ingredients. Add dry ingredients and use a whisk or fork to mix and cut in the flour. Don’t over-mix to try to get out every lump.

Let the batter sit while you preheat your griddle to medium-high. I also prepare a plate with parchment paper and preheat the oven to the warm setting so I have a place to put the cakes as they get done.

When the griddle is hot, add some oil and spread evenly and then add batter by ⅓ cup amounts to create your griddle cakes. Cook on the first side until nicely browned, flip over, and repeat.

These are actually good with nothing on them, but you can serve with syrup, butter, apple butter, jam, powdered sugar – whatever your idea of amazing is with fried dough!

Roasted Umami Sprouts and Carrots plus Baked Apples

This week, at the grocery, I grabbed a bag of brussel sprouts on a whim, and got some baby carrots. So, last night making dinner, I decided to roast them up with a nice umami flavor. I had also gotten some apples that we weren’t really enjoying (picky apple eaters).

Umami Sprouts and Carrots

4 cups of brussel sprouts washed and trimmed
4 cups of mini carrots or carrots peeled and chopped
¼ cup balsamic vinegar
¼ cup olive oil
¼ cup nutritional yeast
sea salt and pepper to taste

Combine all ingredients and toss or gently stir until the vegetables are coated. Place on a baking stone or sheet and cook at 425* until the carrots are done.

Baked Apples

4 apples sliced into wedges
¼ cup maple syrup
3 TBS cinnamon
3 TBS sugar

Spray a baking sheet with nonstick spray if it is not a nonstick sheet, or cover in parchment paper. Arrange apples on the sheet with the inner side of each slice facing up. Drizzle with maple syrup, sprinkle with cinnamon and sugar. Bake at 425* until apples are soft. Serve with non-dairy yogurt if desired.
