Split Pea Soup – A Vegan Pressure Cooker Comfort Food

It’s starting to get cool out, so you know what that means! SOUP!
I love a bowl of soup in the fall or winter, and split pea is a crowd pleasing (though not horribly photogenic) star in my house.

Ingredients

2 pounds dried split peas
1 large onion, diced
6 carrots, peeled and sliced or 1 bag baby carrots
8 cups vegetable broth
2 cups non-dairy milk (or 2 more cups broth or water)
1 T liquid smoke
2 T olive oil
Salt and pepper to taste
optional seasonings: 1/2 cup fresh chopped kale, 1/3 cup chopped basil, 4 minced garlic cloves

Process

If you have the time, you can sauté the onions and garlic until soft or caramelized and go from there. If not (as I did not last night), you can just throw it all in with the beans.

Add beans and sautéed or raw vegetables and remainder of ingredients except salt, pepper, and non-dairy milk to pressure cooker. Bring to high pressure. Cook for 10-12 minutes and then remove from burner to allow to naturally depressurize.

Pour in the non-dairy milk and salt and pepper to taste. Serve with fresh bread, salad, or fruit.  Yummy.

Eggplant Non-Parm – Vegan Recipe

Ingredients

2 eggplants (medium to large), sliced thinly
1 sleeves of wheat saltines, blended to a coarse powder (pretzels or will work)
2 cups panko bread crumbs (or increase the crackers)
3 cups flour
4 tsp salt
4 tsp ground pepper
1/3 cup nutritional yeast flakes
2 T Italian seasoning
4 cups soy milk or rice milk (unsweetened, unflavored)
1/2 cup white vinegar
olive oil

(note – depending on how big your eggplants are, you may need to do a second batch of the wet and dry mixes)

1 red pepper, diced
2 stalks celery, diced
1 medium onion, diced
5 cloves garlic, minced
2 cups diced tomatoes
35 oz crushed tomatoes
2 T raw sugar
2 T Italian seasoning (or fresh basil and oregano to taste)
3 T olive oil
Sea salt and pepper to taste

Process

For eggplant
Place soymilk in a shallow bowl and add vinegar.  Whisk until the milk thickens. It will smell sort of like buttermilk.
Place dry ingredients in larger shallow bowl and mix well.
Individually, dip slices of eggplant in the milk mix (both sides) and then press firmly into the dry mix (both sides)
Coat a baking sheet with olive oil and place slices in one layer. Bake at 425*. Flip when the bottom begins to brown to cook the second side.

For marinara
Put olive oil in large saucepan and heat at medium high. Add onions, red peppers, celery, and garlic and sauté until they begin to soften. Add tomato (diced and sauce) and sugar and stir. Simmer 20 minutes or longer.

Vegan Chocolate Peanut Butter “Milkshake”

It’s all of September 12th and I’m running short on blogging ideas! So, today I’m doing a Thirsty Thursday meme that I may repeat for the other Thursdays this month. And, because it’s been a zillion degrees this week, it seemed appropriate to make it a nice cold drink.

Ingredients

2 ripe bananas, frozen (freeze them with peels off)
1-2 T natural peanut butter
1-2 T vegan chocolate syrup
1 cup non-dairy milk

 

Process

Throw it all in the blender and pulse until the bananas break up. Then blend to smooth. Add additional non-dairy milk to your desired thickness.

It’s a milkshake with some added nutrients, no cholesterol, and fairly low in fat. Yay!
