Bruschetta and White Beans – VeganMoFo 29

I have a day full of appointments, so no time to come up with an excellent MoFo post, but here is an easy dinner idea. 🙂

Bruschetta

12 slices of Italian or French style bread
2 cloves garlic halved
1/4 cup extra virgin olive oil
1 very ripe tomato cut in half
OR 1 large tomato diced
Salt and pepper

Rub bread slices thoroughly with halved garlic cloves and brush with olive oil. Place in the oven at 350* for about 5 minutes. When bread is thoroughly heated, remove the bread from the oven. Immediately rub the bread with the inside flesh of the tomato in order to make the toasted bread moist with the fresh ripe tomato juices OR spread with diced tomato. Salt and pepper to taste.

White Beans With Vinaigrette Sauce

1 lb dried white beans
2 red or green peppers diced
1 medium size onion diced
2/3 cup red wine vinegar
1/4 olive oil
salt and pepper

Soak the beans in cold water overnight. Drain and bring to a boil in enough water to keep beans covered.  Cook at medium heat until tender. While beans are cooking add the chopped onion and pepper to the olive oil and vinegar and whisk.  Drain beans well and mix with the vinaigrette sauce which is prepared separately. Good warm or cold.

My Thanksgiving Menu – VeganMoFo 25

A good time was had by all, and I may never be hungry again.  Oh, who am I kidding?  I’ll probably be hungry again before midnight!

We had:

Spinach dips with breads (vegan)
Veggie tray with ranch
Relish tray (vegan)
Cranberry relish (vegan)
Crackers and cheese
Deviled eggs (by MIL)
Fruit salad (by MIL)
Vegan dressing
Regular dressing
Tofurkey (vegan)
Turkey
Ham
Homemade egg noodles
Mashed potatoes (vegan)
Gravy (vegan & not)
Broccoli (vegan)
Green beans (vegan)
Rolls (vegan)
Cookies (by BILs)
Cupcakes (from BILs)
Zucchini and pumpkin bread (by BILs)
Brownies (vegan)
Pumpkin pie (not vegan)
Apple pie (not vegan)
Pecan pie (vegan)
Pumpkin pie (vegan)

I think that’s it.  It was a LOT of food!  My fridge is way full, even after leftovers went home with guests.  The vegan food mostly came out good this year.  The dressing needed a little more liquid this time, the pecan pie was ok but not stellar, and the vegan pumpkin pie was a horrifying gelatinous mess that I refused to actually let the guests taste and then threw away.  But, I don’t think anyone went home hungry.  The big winner in the desert category was brownies made from this recipe. I did not make any substitutions, but didn’t add the optional chocolate chips or nuts.  They were quite moist, but not overly heavy.  At least one small guest had three, so I knew they were a keeper!

Vegan Pancakes – Quick and Scratch – Vegan MoFo 23

My friend Steve posted on Facebook a comment related to pancakes today (the picture below is in his honor).  It made me think about pancakes and salivate, a lot.  My kids are pancake fans.  Some of them are vegans and some are not, but I’ve given up on making non-vegan pancakes, because they taste the same either way!  Below are my two “favorite” (really, pancake recipes are all a lot alike) recipes.  Breakfast is good for any meal!

Quick recipe with Bisquick 

2 C Bisquick mix
1 C soy milk
1 t vanilla extract
1/4 C applesauce or 1/2 ripe banana mashed

Stir until major lumps are gone.  Add a little more liquid if you like thinner pancakes. Cook on a griddle or large pan, being sure to allow sufficient time on the first side before you flip.

Still Pretty Quick Recipe from Scratch

2 C flour (white or mix white and wheat or your favorite)
3 T sugar (raw or white)
3 t baking powder
2/3 t salt
2 cups soy milk (can use water here for low fat)
1 t vanilla extract
1/4 cup applesauce or 1/2 ripe banana mashed

Combine dry ingredients and mix.  Adjust liquid for thicker or thinner pancakes. Combine wet ingredients and mix well.  Add wet to dry and stir until the lumps are gone.  Cook on your favorite griddle or pan.

Serve with vegan butter and syrup. MMMM…..
