I’m still adjusting this recipe, but it was pretty good today : )
Ingredients
1 1/2 cups flour
1/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp mace (optional)
1/2 tsp ginger (optional)
1/2 tsp salt
2 apples chopped small with or without skins
1 cup soy or rice milk
1/4 cup canola oil
1 tsp vanilla extract
Process
Mix dry ingredients well. Add wet ingredients and stir until mixed. Fold in apples. Spoon into muffin tins (about 1/2 to 2/3 full). Bake at 400* for 20 minutes or until cake tester comes out clean.
