Super Easy Vegan Banana Cream or Milkshakes

I love ice cream. I LOVE it. Vegan ice cream is ok, but it’s not easy to find brands that are really good, and almost all of them are very pricey. So, I’ve worked out what is a perfectly good substitute for me. And, you can make it yourself with a blender or food processor and some simple ingredients.

Ingredients

2 bananas, peeled and frozen overnight
1/4 cup of soy, almond, rice, or coconut milk (more if a milkshake)
Your choice of additional flavors, including peanut butter, chocolate syrup, cookies, chocolate chips, nuts, other fruits, preserves

Process

Chuck the frozen bananas and non-dairy milk into your blender or food processor (I like the processor for “ice cream” and the blender for a milkshake). Blend until smooth adjusting liquid as needed. Add additional flavorings.

Eat and enjoy!

Two of my favorites are to add chocolate and peanut butter and make it a milkshake, or to add frozen or fresh strawberries. Yummy, not that bad for you, low in added sugar, and easy.

Juice of the Day – 2/22/11

Today was a 2 juice day (so far).

Breakfast:
2 oranges
1 grapefruit
4 strawberries

Lunch (thanks to JLgoesvegan):
3 stalks celery
1/2 cucumber
5 leaves romaine
1 green apple
1/3 fennel bulb
1/2 lime

Both were good. I’m still getting my head around green juice and the fact that fresh juice is thin, unlike bottled juice that tends to be thicker. I have texture issues, so sometimes the idea of drinking juice makes me a little gaggy. :S Something to work through!

Juice of the Day – 2/20/11

Yesterday’s juice was a very simple carrot/orange combo.
Today I got a little more elaborate, trying to get extra greens in to see if it would help this RA flare:
1 carrot (huge)
2 smallish oranges
1 handful kale stems
1 handful spinach
1 collard leaf
5 strawberries.

No picture, because it came out a very muddy green. Again, I would say that I didn’t love this, but it was ok. I am hoping that, over time, I develop more of a taste for green juices, because right now I really just don’t like the green taste. But, I did have a bunch of baked kale chips today for lunch, so I’m pretty well green veggied up!
