Vegan Roasted Tomato Pesto

We’ve been getting many grape tomatoes in our CSA share this year, and no one in my family, except me, is really big on uncooked tomatoes. So, they sit until I think of something to make with them. I was getting behind when a Facebook post sparked this idea to roast them up and make pesto. Happily for me, that week’s CSA share also contained fresh basil, and I already had garlic and nutritional yeast, so only a bag of pine nuts was needed. You can substitute almonds easily for the pine nuts if you don’t have them on hand!

Ingredients

3 pints grape tomatoes (other tomatoes will work, also)
1 bulb garlic
1 large bunch of basil
2 cups pine nuts (substitute with almonds if desired)
¼ cup olive oil
½ cup nutritional yeast flakes
Sea salt to taste

Slice grape tomatoes lengthwise and arrange in a single layer on baking pans. Drizzle lightly with olive oil. Place garlic bulb on pan. Roast at 375* until they begin to brown at edges, stirring carefully every 10 minutes. Set aside.

Place pine nuts in food processor. Add tomatoes, garlic (peeled of course), basil (leaves only), nutritional yeast, and remaining olive oil. Pulse to a pesto texture. Add additional olive oil if needed.

Serve tossed with pasta, on a wrap with fresh veggies, etc. My children suggest that it is good enough to be eaten with a spoon directly from the blender.

Yummy.

Cheesy Zucchini Pasta Bake – Vegan Recipe

IMG_1507aI must admit that, while I do most of my meal planning on the weekend before I get groceries, there is almost always a day I forgot or I don’t want to make what was scheduled or I didn’t get enough of something.

On those days, the plan is as follows: Open the cabinet and stare inside. Open the fridge and stare inside. Start that process again but this time randomly pull things out and throw them on the counter. Stare at the pile of things for a while and then start prepping some of them, hoping that an idea will emerge.

And that is how this pasta bake was born. It doesn’t look very pretty, because baked pasta, but it tasted wonderful.

Ingredients

3 stalks celery, chopped
1 large sweet onion, diced
3 medium zucchini, diced
5 cloves garlic, minced
1 large can crushed tomato
1 lb wheat pasta
2 cups nutritional yeast flakes
1.5 cups TVP bits
2 cups water
2 T oregano flakes
1 T dried basil
salt and pepper to taste

Process

Cook pasta, al dente. While pasta is cooking, preheat oven to 350*. Mix spices into crushed tomatoes and water. Fold in the yeast flakes and TVP. Gently combine all ingredients, including well-drained pasta.

Place in large baking pan and cook at 350* for about 45 minutes, or until all vegetables are done to taste.

Green Tomato Marinara Pasta

This was my other experiment last week when trying to use up many pounds of green tomatoes. It also came out deliciously!

Ingredients
1 sweet onion, diced
6 cloves garlic, minced
8-10 green tomatoes, sliced
2 T olive oil
2 T dried basil (or 1/2 cup fresh chopped)
1 T dried oregano
Sea salt to taste

Place tomatoes, garlic, onion, and spices in large baking pan. Drizzle with olive oil. Roast in oven at 450* for 15 minutes or until tomatoes are cooked through.

Remove from oven and allow to cool a few minutes. Move mixture to food processor and pulse gently.

Toss with pasta and serve. Optionally, add 1/3 cup nutritional yeast for a cheesy flavor.
