Fluffy Vegan Pancakes!

I have other vegan pancake recipes that i have posted here, and that I like. But, mostly they are a thinner style of pancake, which is just what I want at times. But, this weekend, I really wanted some nice fluffy pancakes. So, after some searching, pulling together multiple recipes, and adjusting, this is what I ended up with.

2 cups flour
2 tablespoons sugar
2 tablespoons baking powder
1/4 teaspoon salt
2 cups soy milk (or almond/rice milk)
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract

Mix dry ingredients. Add wet ingredients and mix with a fork (don’t use electric beaters). Cook as usual. This makes very nice fluffy pancakes!  I had mine with peanut butter, banana slices, and maple syrup. Oh, they were so good!

Note that it is baking powder, not baking soda.

My cousin suggested adding 1/2 teaspoon of lemon juice as well. I haven’t tried that yet. It makes some sense as it should encourage the baking powder to cause the pancakes to raise. If you try it, let me know what you think.
