No Bake Choco Coco Peanut Protein Cookies

This recipe, adapted from Minimalist Baker, really could not be easier! They are delicious, simple to make, very rich, and even give you some protein!

Ingredients

Oops, forgot the coconut for the picture!
  • 1/2 cup maple syrup
  • 5 Tbsp oat or other non-dairy milk
  • 6 Tbsp coconut oil 
  • 6 Tbsp unsweetened cocoa powder 
  • 2 1/2 cups oats 
  • 2/3 cup peanut butter
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1 cup mini vegan chocolate chips 
  • 1 cup shredded coconut 
  • 1/2 cup vegan protein powder
  • 1/4 cup turbinado sugar

 

Instructions

  1. Line a baking sheet with parchment paper.
  2. Place maple syrup, oat milk, coconut oil, cocoa powder, and vanilla in a medium saucepan and bring to a low boil over medium heat, whisking periodically. Allow to boil for 1-2 minutes. 
  3. Place dry ingredients, except sugar, in a large bowl and mix.
  4. Add peanut butter and the prepared chocolate sauce and mix in.
  5. Make balls of the batter (or use a scoop for ease) and place on the parchment. 
  6. Sprinkle with turbinado sugar.
  7. Place baking sheet in the refrigerator for an hour.
  8. Eat!

Vegan Apple Breakfast Cookies

Need a cookie for breakfast? Sometimes I do. These are delicious and have very little in them to feel guilty about.

Ingredients

2 mashed bananas
2 cups smooth peanut butter
½ cup agave
1 cup raisins
3 cups chopped apples
2 cups oats
1 ½  cups wheat flour
1 ½  t. baking soda
1 T. cinnamon
½ t. salt

Process

Mix first 3 ingredients until smooth. Combine all dry ingredients and then add in the wet mixture. Stir to thoroughly combine. Add additional flour if needed to reduce stickiness until dough can be dropped onto baking sheet in large balls and flattened to about ½ inch in thickness.

Bake 10-15 minutes at 350* until lightly browned on the bottom. Allow to cool and set. If keeping overnight, it might be good to chill these, as they are a fairly “wet” cookie.

Makes 24 large cookies.

Vegan Chocolate Chip Cookies

If you like chocolate chip cookies that aren’t super super sweet, then these are AMAZING! I can’t take any credit. The recipe and the picture are from Trans-Planted.

1/2 cup brown sugar
1/4 cup granulated sugar
2/3 cup vegetable oil
1/4 cup almond or soy milk (I used unsweetened)
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
3/4 teaspoon salt
3 ounces vegan chocolate chips
